Pidy Expands Portfolio with Three New Sweet Puff Pastry Bites

European patisserie specialist Pidy has expanded their range of ready-to-use pastry cases with the addition of three new sweet puff pastry bites.
Available in versatile Vanilla, classic Chocolate, and chic Cinnamon, the bite-sized pastries are ideal as sweet canapes, sharing desserts, buffets, petit fours, or a sweet addition to afternoon tea stands.
All flavours have been made in line with Pidy’s ‘Clean’ and ‘Green’ ethos, meaning the pastries are free from colourants, artificial flavourings and preservatives – yet naturally boast an impressive shelf life of 9 months. This makes them ideal to quickly grab and fill as required to meet demand. Environmentally-conscious operators will also appreciate the flexibility this provides in terms of ordering in bulk to reduce unnecessary food miles.

Fabien Levet, Commercial Manager at Pidy UK, comments on the versatility of the new pastries:
“Desserts represent a huge opportunity in the foodservice business, so it’s important to have options that stand out from the crowd. Our new puff pastry bites offer the familiar flavours of vanilla, chocolate, and cinnamon, which are extremely popular and compatible with a wide range of fillings to give chefs ultimate culinary creative freedom.”
The pastries can be enjoyed hot or cold, depending on fillings. For best results, chefs should bake the pastries for 5-10 minutes at 170ºC before allowing to cool for a crispier texture and to improve moisture resistance, guaranteeing quality for longer and making it ideal for chefs looking to prep ahead of time.
Utilising ready-to-fill pastry bases is a particularly beneficial solution for venues limited by space, staff, or equipment required to make pastry in-house. The miniature puff pastry bites can also be served as a casual option or dressed up to create sophisticated dishes.

For example, chefs looking to incorporate seasonal flavours could take inspiration from Pidy’s Cinnamon Zakouski Pumpkin Pie recipe. Simply fill Pidy’s delicate cinnamon puff pastries with a pecan crisp, then top with a pumpkin ganache made of chocolate, milk, glucose, spices, gelatine, cream, and pumpkin pulp. Finish with a chocolate disk, some homemade maple syrup whipped cream, and decorative flowers – et voila! The full recipe is available in Pidy’s free recipe booklet, Bring Autumn to Your Plate, which can be found in their Instagram bio @gourmetpidy.
