Ingredients

  • 96 Pidy spinach veggie cups (716.81.096)
  • 400 cl of 35% whipping cream
  • 800 g of shelled peas
  • Fresh thyme
  • 40 g of chives
  • 400 g ricotta
  • Olive oil
  • 288 garlic flowers
  • Salt & Pepper

Chef's Tips

Cook the peas al dente for more texture.

Preparation

    Cook the peas al dente in simmering water.

    Coat the peas in olive oil and season.

  3. 3

    Make a whipped cream, add the ricotta, chopped thyme, chopped chives, season, and place in a piping bag.

    To assemble the pieces, pipe the thyme-flavoured whipped cream into the bottom, arrange the peas, and insert 3 flowers per piece.
