Ingredients
- 96 Pidy spinach veggie cups (716.81.096)
- 400 cl of 35% whipping cream
- 800 g of shelled peas
- Fresh thyme
- 40 g of chives
- 400 g ricotta
- Olive oil
- 288 garlic flowers
- Salt & Pepper
Chef's Tips
Cook the peas al dente for more texture.
Preparation

Cook the peas al dente in simmering water.

Coat the peas in olive oil and season.

Make a whipped cream, add the ricotta, chopped thyme, chopped chives, season, and place in a piping bag.

To assemble the pieces, pipe the thyme-flavoured whipped cream into the bottom, arrange the peas, and insert 3 flowers per piece.
