Trendy Rectangle with mascarpone cream, apple, cinnamon and Calvados


This mascarpone cream with apple, cinnamon and Calvados is creamy and tasty. Perfect for serving on a rainy day and it’s definitely finger-licking good too!

Ingredients

1 Pidy shortcrust 22cm or 6 Pidy Trendy Rectangle tartlets

2 apples

1 tsp of cinnamon

5cl Calvados

325 g of mascarpone

10 egg yolks

175 g of sugar

375 g whipped cream

125 g of egg whites

cacao powder

Method

Servings: 4

  1. Whip up the egg yolks and 75 g of sugar together au bain-marie until they’re foamy.
  2. Mix the mascarpone with the Calvados.
  3. Whisk the egg whites with 100 g of sugar.
  4. Mix the yolks with the mascarpone, then the whipped cream followed by the meringue.
  5. Fry the diced apples in some butter.
  6. Add some sugar and cinnamon and proceed to flambé with the Calvados.
  7. Let everything cool and divide over the tart. Finish by garnishing the mascarpone cream with some cacao powder and cinnamon.
