Our History
The Pidy Heritage: A Legacy of Excellence
The Pidy story originated nearly sixty years ago within the confines of a modest Belgian pastry shop in Ypres. It was there that the puff-pastry shell—the vol-au-vent—was reinvented. Pre-baked, airy & flaky, delicate and immediately ready for the chef’s creative inspiration.
The word spread quick, demand intensified, necessitating a transition to a more scalable production model. This expansion allowed Pidy to provide its signature pastry to professionals across the globe.
Formally established in November 1967, Pidy has since defined the pastry industry standard; the rest, as they say, is history.

Since 2016, Pidy has been a proud brand of Bouvard Professional, the ready-to-fill specialist arm of the French family-owned Biscuits Bouvard. Bringing deep expertise in shortcrust, puff and choux pastry, sponge and macarons, Bouvard Professional operates five production units across Belgium, France and the USA, serving customers in 50+ countries across foodservice, retail and industry. Our sites are certified to BRC, IFS and SQF standards, ensuring the highest levels of food safety and quality.
