Quiche with gratin of potato and Lancashire cheese

  • 10 Pidy Quiches Ø 8.5cm
  • 1kg hard boiling potatoes
  • 2 cloves of crushed garlic
  • 3 finely diced shallots
  • 3dl milk
  • 3dl cream
  • 6 eggs
  • Pepper, salt and nutmeg
  • 300g grated Lancashire cheese
  • Peel the potatoes, wash and boil until al dente. Drain and cool down and slice.
  • Divide in layers over the quiche bases and sprinkle with diced shallots.
  • Mix the milk with the cream, eggs, pepper, salt and nutmeg.
  • Fill the quiches with this mixture, cover with grated Lancashire cheese and place in a preheated oven at 180°C for 12 minutes.
