Pidy Gourmet Mini Savarin with African flavours
Ingredients
Pidy Gourmet Mini Savarin
chocolate mousse
1 l water
500 gr sugar
3 tablespoons ginger
250 gr kumquats
English sauce
red fruits
Preparation
Add 2 tablespoons of finely chopped preserved ginger to the chocolate mousse
Bring 1 l water to the boil, with 500 gr sugar and 1 tablespoon ginger
Place Pidy Gourmet Mini Savarins in the syrup and keep it at a temperature of +/- 80 °C
When they are sufficiently soaked, place on a grill and allow to drain
Take a 1/5 l sugar syrup and preserve 250 gr kumquats which have been cut in half
Fill the bottom of a small glass with a layer of English sauce or make some pannacotta preserve
After setting, fill with some red fruits and red coulis up to 1/5 of the edge
Place a Pidy Gourmet Mini Savarin on top and set in the fridge
Decorate as desired
