Coupe Pidy Gourmet Chocolate Wafer (Gaufrette) with melon foam and meringue
Ingredients
10 Pidy Gourmet Chocolate Wafer Biscuits (Gaufrettes)
10 Pidy Gourmet Amusettes
1 cavaillon-melon
50 gr sugar
50 gr egg-white
250 gr cream
40 gr dessert gelatine
1 bundle mint
1/2 lemon
100 gr sugar
1/4 l water
Preparation
Make a mousse with 250 gr puree of cavaillon-melon, the half-whipped cream and the dessert gelatine
Spoon or pipe it into the Pidy Gourmet Wafers (Gaufrettes) until 4/5 full
Let them stiffen in the fridge
Meanwhile make a meringue with 100 gr egg-white and 100 gr sugar
Pipe the filled Gaufrettes into a ball-shape
Rub off with palette and heat on gas ring
Serve with a light mint sauce and melon balls in a Pidy Gourmet Amusette spoon
