Tips & tricks for delicious quiches

Characteristics:

  • Pidy quiches are crunchy puff pastry bases ranging from 4 to 18 cm.
  • A Pidy quiche is neutral in taste, so it can be used for both sweet & savoury applications.
  • Supplied with or without aluminium tray or with an artisan look with baking ring and baking paper.
  • Produced with Non- Hydrogenated fats, so without transfats.
  • Stored at ambient temperature.
  • Shelf life of 12 months.

Using a quiche mix:

Tip 1 : Preheat the oven to 180°C. Put the empty quiche base in the oven for 2 to 4 minutes. Take the base out of the oven and brush the inside with a beaten egg. Let it cool down for about 5 minutes. Because of the heat of the empty quiche base, this will form a perfect protective layer and will diminish the chances of leaking while baking.

Tip 2 : Always fill the empty quiches first with the solid ingredients.

Tip 3 : Avoid air in your egg mixture. When the quiche mix has reached a certain temperature, the extra air will cause your mix to expand & could cause breakage or leaking.

Tip 4 : Filled quiches can be frozen without problem.

Tip 5 : For an extra crunch, sprinkle some grated cheese on the quiche.

Cold applications:

When using the Pidy puff pastry quiches as a carrier for vegetables or for cold applications, we advise you to heat the bases shortly in an oven to restore the crunchiness:

  • 5 to 8 mins in a conventional oven at 170°C
  • 6 to 9 mins in a hot air oven at 160°C
